I want to extract datasets from a collection. The Extract Dataset tool just extract one of the elements. How can I extract all datasets ?

Unfortunately, you just can’t. The main problem here is that a collection can hold an arbitrary number of elements so there would be no way to do this in a workflow and know how many datasets would result from the step.
